Christmas cake/pudding pancakes

There is always a bit of left over Christmas pudding so why not mix it up
and have it for breakfast or a quick pudding.
Ingredients
 120g self raising
flour
 1 tbsp castor sugar
 pinch of cinnamon
(optional but nice)

 1 large egg
 100ml milk
 1 0 0 g l e f t o v e r
Christmas pudding
or cake

 pinch of salt.

Method
1. Put the flour, castor sugar, cinnamon and pinch of salt, into a
bowl.
2. Make a well in the centre and add the egg. Then mix it all
together with the milk.

3. Add the broken up pudding and mix well together till smooth.
4. In a nonstick frying pan heat a little oil and place a large
spoonful of mixture in the pan and cook each pancake for 2-3
minutes on both sides.
5. Enjoy with ice-cream, cream, syrup or a little left over brandy
butter.
