This is so easy yet wonderfully
refreshing on a summers day.
Serve with a few raspberries
and a little shortbread.
4 tbsp caster sugar
200ml double cream
3 tbsp lime juice (about
2 limes)
Zest of 1 lime
Method
Put the cream and sugar in a
saucepan. Heat until just
boiling, Then boil vigorously
for 2½mins while stirring constantly.
Turn off the heat, stir in lime juice most of the zest and divide
between 2 small pots or glasses.
Chill for at least 2hrs (or overnight if you're making ahead)
until set.
Serve topped with a few raspberries and remaining zest.
