            RECIPE OF THE MONTH


                Thanks to our WI members for sharing their favourites


           Beetroot with Apple and Nuts

           If you love beetroot, then this will be a wonderful way of serving it
           either with a salad or ploughman's.


           Ingredients

           3 medium sized beetroots
           2 tbsp sherry vinegar
           1 tbsp olive or sunflower oil

           1 granny smith apple
           handful  of  halved  walnuts  or
           pecans
           sea salt and black pepper


           Method
           Boil the beetroot until it is cooked.
           Drain and rinse under a cold tap.
           When it is cool enough to handle,
           peel off the skins.

           In  a  large  bowl  whisk  a  good
           pinch of salt into the vinegar until
           dissolved.  Next  whisk  in  the  oil  and  check  the  seasoning  add
           some black pepper.
           Grate the beetroot with the coarse side  of the grater and drain
           well if it releases a lot of liquid.
           Grate the apple in the same way

           Put the apple and beetroot  into the  bowl with the  dressing and
           mix well, then top with the nuts.
