The recipe is for a dinner
party scale down or up as
required. Trim and skin 8
fillets of sole or plaice (or
get the fishmonger to do it
for you, remember you will
need the skin, head and
bones to take home).
Place the skin, bones in a
saucepan and cover with
cold water. Add a small
onion (peeled and chopped) pepper and salt and a little tarragon vinegar
and simmer gently to make a stock.
Coat a fireproof dish with butter, gently rub the fillets with lemon juice and
sprinkle with salt. Roll the fillets around your finger into a turban shape so
as to leave a hole and fill the hole with deseeded green grapes. Tie the
fillets with cotton to keep the shape and arrange the fish in the dish. Pour
WISHING over 1 glass of white wine and one of the fish stock. Cover with buttered foil
and poach in the oven for 15 to 20mins – reg 5- 375degrees f.
EVERYBODY A VERY Put 2 egg yolks into a small bowl with ¼ pt single cream and ¼ pt of liquor
the fish has been baked in. Stir over saucepan of simmering water until
HAPPY NEW YEAR thick and creamy. Season to taste. Transfer fish to serving dish and pour
over sauce, you can decorate with parsley and a few grapes
Serve with brown bread and butter.
A very old fashioned dish, but delicious and worth a try.
